Carlos is one of the most “veteran” members of the team, having been a part of Viña Undurraga since 2006, and he is currently in charge of the Aliwen Reserva brand. This brand is targeted towards a segment of young, dynamic, and connected consumers who appreciate nature and their surroundings

Fermentation
The fermentation takes place in stainless steel tanks starting at 18°C – 20°C and reaching 28°C – 30°C over a period of 7 – 10 days. After the alcoholic fermentation is completed, there is a tasting to determine the need for a post-fermentative maceration of 7-10 days
Aging
70% of the mix is aged in second and third use French and American barrels for around 9 months. The remaining 30% of the mix is kept in stainless steel tanks to ensure the maximum expression of the fruit and variety to the final mix.
tasting notes:
This wine is a very attractive and intense vivid red colour. In the bouquet, ripe red fruit combines with the complexity of the wood, which provides notes of vanilla, chocolate, tobacco and hazelnuts. The palate has good volume and gentle, well rounded tannins. This wine is an excellent accompaniment or beef, game, mature cheeses and pasta with rich sauces.

Fermentation
The must was then fermented in stainless steel tanks with automatic temperature control. The fermentation took place at 28°C for a period of 7 days, during which there were three daily pump-overs and delestage was used twice halfway through the fermentation process.
Post-fermentative maceration: This took an average of 10 days.
Aging
70% of the wine underwent malolactic fermentation and an average of nine months’ maturation in second-, third- or fourth-use French, American and Hungarian oak barrels. The remaining 30% remained in stainless steel tanks to contribute a fruity component to the wine.

This wine is an attractive violet-red colour. The nose reveals perfectly blended ripe fruit, spices and wood with a touch of mocha and tobacco; altogether a wonderful bouquet. This is a fresh, juicy Carménère filled with smooth, sweet tannins. A modern wine, it achieves perfect balance between the fruit and the wood and delivers complexity and elegance. Its full body, ripe tannins and long, elegant finish make this an ideal partner for meat, chicken or cheese. It also pairs beautifully with aubergine au gratin.

The fermentation was carried out in stainless steel Tanks which were filled up to only 80% of their capacity to achieve a bigger contact surface with the must and the skins during the pump-overs. The fermentation lasted 7 days at a temperature that varied between 28° and 30°C. Finally, to achieve better structure and complexity, the wine was placed in maceration with skins for 13 days.
Aging
After the malolactic fermentation was done, the wine was introduced into French and American oakcasks for a period of nine months.

This wine has a beautiful violet red colour with an elegant aroma. Oak characters have immaculately combined with the fruit flavors making it an ideal accompaniment for meat, casseroles, pasta and cheese

Fermentation
The fermentation was carried out in stainless steel tanks with automatic temperatura control. This lasted on average 7.5 days at a maximum temperature of 28 ° C. There were 3 daily pumpovers with 2 “delestages” at the middle of the fermentation. Post-fermentative maceration: It was performed on average for 10 days.
Aging
70% of the wine was introduced in French, American and Hungarian barrels of 2nd and 3rd use for an average of 9 months in which malolactic fermentation was also carried out. The remaining 30% remained in stainless steel tanks to provide the “fruit” component to the wine
tasting notes:
This wine has an intense and deep ruby red color. On the nose, delicious flavors of berries, plums and black cherries, followed by aromas of pepper and slight touches of vanilla and dark chocolate. It is a modern wine that presents a perfect balance between fruit and wood, delivering complexity and elegance.
Its final structure is wide and round, thanks to the presence of the barrel that has been integrated in an excellent way.
It combines perfectly with all kinds of roasts, mature cheeses and sweet and sour sauces. Stews and herbs are another point of union with this wine.

Fermentation
Fermentation took place in stainless steel tanks at a temperature of between 25ºC and 27ºC for 5-7 days. The wine remained in contact with the grape skins for an additional 5 days after the fermentation was complete.
The malolactic fermentation took place in second- and third-use French and American oak barrels, in which the wine was aged for six months
tasting notes:
This wine is a red of medium intensity. The exuberant bouquet reveals fresh red fruit such as cherries and berries. On the palate it is succulent, fresh and has good acidity. It is medium-bodied, with a soft, long and persistent finish. This wine is a superb, refreshing aperitif and pairs well with salad, game, oriental cuisine and even some types of dessert.

Fermentation
The process took place in stailess steel vats, at temperatures ranging between 13 and 17ºC for 20-day period to increase the aroma and taste. Finally the Cabernet, Syrah and Merlot were blended.
tasting notes:
This wine has an attractive and vivid pinky ruby color. On the nose explodes plenty of fresh berries leading to a silky long lasting finish. Amazing as an appetizer, perfect complement with thai food or just to chill out with friends. Serve between 10-13ºC

Fermentation
The must, placed in stainless steel vats, was inoculated with selected yeast. The process took 20 days, at temperatures ranging between 13° and 17° C. in order to extract the maximum varietal aromas
tasting notes:
This wine has a very pale colour with green tones. Intense fruit aromas unveil a crisp, medium body wine with delicate citrus notes. It is ideal for sipping alone as an aperitif or accompanying oysters, fresh seafood, sushi and salad.

Fermentation
The must, placed in stainless steel vats, was inoculated with selected yeast. Two days later, 60% of it was transferred to new and second use french and american Oak barrels, where it fermented for 14 days. The wine remained in the barrels for four months, where it was subjected to permanent “battônages”. The other 40% of the must was left to ferment for 16 days, at temperatures ranging between 17°C and 19° C in order to extract the máximum varietal aromas and flavors
tasting notes:
This exciting wine has a full and ripe yet elegant nose. On the palate, it is rich and firm, notable for a bright acidity. It turns lush and opulent with deep fruit flavors that finish oaky and sweet. It is an excellent accompaniment for shellfish, fish and salad.

As Undurraga Winery, we settle our commitment to Fundación Reforestemos, we have been the official winery for 7 years and since then we have been contributing to this great campaign.
Why did we choose an activity like this?
We are going through the deepest and most extensive drought in our history as a country. 72% of Chile’s surface suffers from drought and 27% is at risk of desertification, so reforestation, maintenance and cleaning work play a key role in ensuring the survival of our ecosystem.
Fundación Reforestemos celebrates 10 years in its reforestation work throughout Chile, it is the largest and most extensive reforestation campaign in the history of Chile, with projects in 11 regions, 56 communes and 3 countries.
By the end of 2021, the goal of 1 million native trees planted was met thanks to the collaboration of companies and private investors
